Summer Squash

Cooking down yellow squash with onions and butter is so simple but so luxurious. Add some paprika and cayenne and it is elevated from a simple southern side dish to something punchy and addicting. I love to make a huge batch with caramelized onions and meltingly tender squash and serve it as a side dish or even for the meal, topped with feta or roasted tomatoes.

That’s all I got for today. Good squash, great flavors, hearty end-of-summer treat.
